Mix the sausage base – In a medium bowl, combine the ground chicken, poultry seasoning, paprika, garlic powder, onion powder, cumin, kosher salt, and maple syrup.
Form into patties or links – Use your hands to gently mix and shape into 6 equal patties or sausage-shaped links.
