- ½ cup soy sauce
- 1 tablespoon dijon mustard
- Zest and juice of 1 orange
- ¼ cup honey
- ½ teaspoon ground ginger
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 tablespoon sesame oil
- 1 lb salmon
- 2 cups cooked rice
- 1 tablespoon sesame seeds
- 1 scallion greens only, sliced diagonally
Make the sauce. Add all the ingredients except for the salmon to a cold sauce pan and whisk to combine. Bring heat to medium and allow the glaze to simmer for about 12-15 minutes, stirring occaisionally, until it has reduced. You want the sauce to stick to the back of a spoon.
While the glaze is heating, cut the salmon into 1-2 inch pieces and add into a bowl. When the glaze is ready, pour directly over the salmon, reserving a little to drizzle later. Toss the salmon to make sure all pieces are coated on all sides. Add the salmon to a quarter sheet tray with parchment paper, evenly spreading out the pieces.
Arrange a rack in the oven at the top, right under the broiler. Broil for about 6 minutes, or until the salmon is done to your liking.
Plate with rice and your favorite vegetables. Drizzle any remaining glaze over the salmon and rice. Sprinkle sesame seeds and scallions, and enjoy!
