Pulse Oreos (cookie and filling) in a food processor until fully blended.
Mix the room temperature cream cheese with the Oreo crumbs. You can mix it by hand or in a stand mixer.
While mixing, add in the Baileys until fully combined
Place a piece parchment paper over a 9 x 13 baking sheet. Scoop out 1 tablespoon of dough at a time and roll into a ball. You can make the balls smaller or larger than this, or have a mix of sizes like I did. Keeps it fun!
Once the dough is all rolled out, place the baking sheet in the freezer for the balls to take shape. Leave in for about 15 - 20 minutes
Meanwhile, melt the chocolate. Once melted, add in the oil and stir. (The oil helps the chocolate stay soft and not crack when bitten into).
Take the truffles out of the freezer. Using two forks, or a spook and a fork, dip one truffle at a time in the chocolate until fully covered, then place back on the rack to dry. Once all truffles have been coated, return to the refrigerator or freezer before serving. If these will be left out at a party I prefer to cool with the freezer.
