Viral Brothy Rice Bowls
These Viral Brothy Rice Bowls feature coconut curry, ground beef, tender zucchini, spinach. They pack a ton of flavor and are easily customizable. An easy, cozy dinner ready with simple ingredients.

These coconut curry beef bowls are a fresh, flavorful way to turn simple ingredients into a comforting weeknight dinner. Savory ground beef, tender zucchini, and wilted spinach are served over rice and finished with a warm, aromatic broth made with red curry paste, coconut milk, garlic, shallots, and soy sauce.
The best part is the curry broth. It’s creamy from the coconut milk, savory from the soy sauce, and packed with flavor from the red curry paste. A squeeze of fresh lime brightens everything up, while chili crisp adds a little heat and sesame seeds bring a subtle crunch. My version of the Viral One-Pan Baked Dumplings share a similar sauce!

Why You’ll Love This Recipe
- Big flavor, minimal effort. Red curry paste, coconut milk, garlic, shallots, and soy sauce create a rich, savory broth without a long ingredient list.
- A fun twist on rice bowls. Instead of a traditional stir-fry sauce, the ingredients are served in a flavorful coconut curry broth.
- A balanced, satisfying meal. Ground beef provides protein, while zucchini and spinach add vegetables to every bowl.
- Easy to customize. Swap in different vegetables, adjust the spice level, or swap rice for noodles.
- Perfect for busy weeknights. The broth and beef cook separately, making this an approachable dinner that comes together quickly.

Ingredients
- Garlic – Fresh minced garlic adds a savory, aromatic base to the broth.
- Shallot – Adds a mild sweetness and depth of flavor. Yellow onion works in a pinch.
- Red curry paste – The key to the broth’s bold flavor, adding aromatics, spice, and complexity. Curry pastes vary in heat, so adjust to your preference. I also use this in my Thai Curry Chicken Meatballs!
- Light coconut milk – Creates a creamy broth without making it too heavy. Full-fat coconut milk works if you prefer a richer result.
- Broth – Chicken or vegetable broth adds savory flavor and thins the coconut milk to a spoonable consistency.
- Ground beef – Provides a savory, hearty base for the bowls. I choose 80/20 or 85/15 for this recipe.
- Low-sodium soy sauce – Seasons the beef and broth. Use less if choosing regular soy sauce.
- Vegetables – I use sliced zucchini and chopped spinach for some extra greens an nutrients. Shredded carrots, chopped cabbage, or sliced mushrooms would also work.
- Oil – Used to sauté the aromatics and toast the curry paste, and used as needed with the beef depending on the fat content.
- Cooked rice – Absorbs the flavorful broth and makes the bowls satisfying. Jasmine rice is especially delicious here, but any rice you enjoy will work.
- Garnishes – A squeeze of lime balances the richness, chili crisp adds heat and texture, sesame seeds add some visual interest, and scallion greens can add freshness

Instructions
- Make the curry broth. Heat a drizzle of oil in a saucepan over medium heat. Add garlic and shallot and sauté until fragrant, about 2 minutes. Add red curry paste and cook for 1 minute, stirring constantly. Add coconut milk, broth, and 3 tablespoons soy sauce. Bring to a boil, then reduce heat and simmer while preparing the beef and vegetables.
- Brown the beef. Heat a skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces, until browned and cooked through. The longer it caramelizes, the more flavor you will extract. Stir in 1 tablespoon soy sauce.
- Cook the vegetables. To the ground beef, add zucchini and cook for 10 minutes or until tender. Add spinach and cook for 1–2 minutes, until wilted. Add a drizzle of oil if the skillet becomes dry.
- Assemble the bowls. Divide cooked rice between bowls. Top with ground beef and vegetables, then ladle the warm curry broth over everything. Finish with fresh lime juice, chili crisp, sesame seeds, and/or scallion greens. Serve immediately.

Tips for the Best Viral Brothy Rice Bowls
- Toast the curry paste. Give the red curry paste about a minute in the pan with the aromatics before adding the liquids. This helps develop its flavor and makes the broth taste more complex.
- Adjust the broth to your liking. For a richer broth, use full-fat coconut milk. For a lighter, more soup-like consistency, add a splash of extra broth.
- Finish with acid. Lime is more than a garnish here. Its acidity balances the creamy coconut milk and savory soy sauce, making the entire bowl taste brighter.
- Taste before adding salt. Curry paste, broth, and soy sauce all contribute seasoning. Taste the broth before adding any additional salt.
Substitutions and Variations
- Add more vegetables: Chopped mushrooms, bell peppers, snap peas, shredded carrots, or bok choy would all work well.
- Make it spicier: Add extra red curry paste to the broth, gochujang to the beef, or more chili crisp as garnish.
- Switch up the grains: Serve with brown rice or farro for a boost of fiber, or serve with noodles instead!

Storage
Store the curry broth, beef and vegetables, and rice in separate airtight containers in the refrigerator for up to 3–4 days.
To reheat, warm the broth in a saucepan or microwave until steaming, and reheat the beef, vegetables, and rice separately or together. Finish with fresh lime and chili crisp just before serving.
