Ingredients

Curry Broth

  • 1 tablespoon Oil
  • 3 cloves garlic minced
  • 1 shallot finely chopped
  • 3 tablespoon red curry paste TIP: be sure to give your curry paste a try before adding to the recipe, as different brands will have different levels of heat.
  • 1 13.5oz can light coconut milk
  • 2 cups chicken or beef broth
  • 3 tablespoon low-sodium soy sauce

Ground Beef and Vegetables

  • 1 lb ground beef I prefer 80/20 or 85/15
  • 1 tablespoon low-sodium soy sauce
  • 1 zucchini sliced thin (option to reserve ¼ of the zucchini as a spear for garnish)
  • 2 cups chopped spinach
  • Oil as needed

For Serving

  • 3 cups cooked rice Jasmine works best
  • Lime wedges
  • Chili crisp
  • Sesame seeds
  • ¼ zucchini optional

Instructions

  • Make the curry broth. Heat a drizzle of oil in a saucepan over medium heat. Add garlic and shallot and sauté until fragrant, about 2 minutes. Add red curry paste and cook for 1 minute, stirring constantly. Add coconut milk, broth, and 3 tablespoons soy sauce. Bring to a boil, then reduce heat and simmer while preparing the beef and vegetables.
1 tbsp Oil, 3 cloves garlic, 1 shallot, 3 tbsp red curry paste, 1 13.5oz can light coconut milk, 2 cups chicken or beef broth, 3 tbsp low-sodium soy sauce
  • Brown the beef. Heat a skillet over medium-high heat. Add ground beef and cook, breaking it into small pieces, until browned and cooked through. The longer it caramelizes, the more flavor you will extract. Stir in 1 tablespoon soy sauce.
1 lb ground beef, 1 tbsp low-sodium soy sauce
  • Cook the vegetables. To the ground beef, add zucchini and cook for 10 minutes or until tender. Add spinach and cook for 1–2 minutes, until wilted. Add a drizzle of oil if the skillet becomes dry. If you reserved the ¼ of the zucchini, add it to the skillet on the side, cut side down. Cook for a few minutes until slightly tender.

  • Assemble the bowls. Divide cooked rice between bowls. Top with ground beef and vegetables, then ladle the warm curry broth over everything. Finish with fresh lime juice, chili crisp, sesame seeds, and/or scallion greens. Serve immediately.
